Seitan Satay with Peanut Sauce

A great recipe for entertaining.
Diet Types: Vegan, Vegetarian
Ingredients:
  • 1 package bamboo skewers
  • 1 ½ teaspoons fennel seed
  • 2 teaspoons ground Turmeric
  • 1 16 ounce jar seitan, drained
  • ¾ cup unsweetened Coconut Milk
  • 1 tablespoon Tamari
  • ½ cup peanut butter
  • ¼ cup warm water
  • 1/3 cup rice vinegar
  • 1 clove garlic, minced
  • ½ tablespoon grated fresh ginger
  • 1 teaspoon sugar
  • 1 teaspoon red chili flakes
  • ¼ cup toasted Sesame Oil
  • Serves: 4
    Cooking Time: 30 minutes - one hour
    Instructions:
    Soak skewers in water for 10 minutes. Meanwhile dry roast fennel seeds in a skillet until light brown. Grind Turmeric and fennel together in a coffee grinder or blender. Slice seitan into ½” chunks and thread onto skewers. Place in a deep bowl. Combine Coconut Milk, soy sauce and ground spices. Pour over skewers in bowl, stirring to coat. Marinate 1 hour in the refrigerator. Meanwhile make peanut sauce by thinning peanut butter with warm water, using a wire whisk. Whisk in all other ingredients except Sesame Oil. Slowly blend in Sesame Oil by pouring a very tiny stream of oil as you continue to whisk peanut sauce. Preheat grill or broiler. Place seitan skewers under broiler or on grill and cook , turning every 3 minutes, until nicely browned. Serve with peanut sauce.
